Simple + Healthy Eggplant “Pizzas”
This dish tastes like the real deal and sets my taste buds soaring. Most of us are looking for quick, healthy weeknight dinners – and this is an essential go-to. Vegetables are also surprisingly filling and we can up our portions because they are so vital for our bodies (and lower in fat & calories).
So try out this dish and enjoy it for dinner, lunch tomorrow, leftovers or pop in the freezer. Revamp these leftovers into a sandwich or diced into a pasta. The options are endless!
Simple + Healthy Eggplant “Pizzas”
A quick & healthy take on pizza. The flavors harmonize so well together, it truly does taste like pizza! This recipe is also great for revamping the leftovers.
Ingredients
- 1 eggplant
- 1-2 tomato(es)
- 4 fresh basil leaves dried is ok
- 1 tbsp balsamic glaze optional
- 1 tbsp parmesan cheese preferably fresh
- 1/2 tbsp fresh or dried parsley
- 1 tbsp olive oil
- salt & pepper to taste
Instructions
- Preheat the oven to 400 degrees Fahrenheit and prepare a baking dish/pan.
- Wash eggplant and slice into 1-inch thick pieces. Place slices on the baking dish/pan. Lightly coat with olive oil. (If you have time, salt 15 minutes early and dab the released moisture with a paper towel).
- Slice the tomato and place on top of each eggplant slice. Then top with salt, pepper, parmesan, balsamic glaze, parsley & basil.
- Pop in the oven for about 20-25 minutes or until desired texture.
