Crispy + Healthy Eggplant Fritters with Marinara Dip

This faux fried food tastes just as delicious as the real thing AND our bodies still feel fantastic after. Sign me up! This recipe is simple. It consists of minimal prep, a short cook time, and is nutrient dense.

Also, I encourage you to try other dips with this snack. Being that I am Italian, I was inspired to keep the Mediterranean feel to this dish.

Crispy + Healthy Eggplant Fritters with Marinara Dip

A healthy hybrid of fritters and chips. These are quick and simple to make for a snack, party favor or appetizer.

Ingredients
  

For Eggplant Fritter Chips

  • 1 eggplant size may vary depending on amount to be made
  • 1 egg
  • 1/2 cup Italian breadcrumbs
  • 1/4 cup panko breadcrumbs
  • 2 tbsp grated parmesan preferably fresh

For Marinara Dip

  • 1 14.5 can diced tomatoes use another can for a larger portion
  • 2 tbsp fresh parsley dried is okay
  • 1 tsp salt more to taste
  • 1 tsp pepper more to taste
  • 1 tsp oregano
  • 1 tbsp fresh basil dried is okay
  • 4 cloves chopped fresh garlic powder is okay
  • 1 tbsp olive oil to coat the pan

Instructions
 

For Eggplant Fritter Chips

  • Preheat your oven to 400 degrees Fahrenheit and have a baking sheet ready (with foil or cooking spray).
  • Chop the eggplant into 1/2 inch (or thinner) slices. (I’d also recommend to salt the eggplant 10-15 mins before starting. This helps release the moisture, leaving it more firm.)
  • Crack 1 egg into one bowl and create breadcrumb mix into another bowl. For breadcrumbs, combine Italian breadcrumbs, Panko & parmesan together. Stir.
    Then dip one eggplant slice into the egg wash and the breadcrumb mix after. Place the slice onto the baking sheet. Continue this with all slices.
  • Put in the oven for about 15-20 minutes. This may vary depending on the thickness of eggplant slices. A good rule of thumb is that they are ready when golden brown.

For Marinara Dip

  • Coat a saucepan with olive oil and heat on medium low. Once hot, add the chopped garlic. Sauteé for about 2 minutes or less to soften. (Garlic can burn quickly so keep an eye on it!)
  • Add all other ingredients and stir. This can simmer for about 10 minutes at the least. If you have time, feel free to let this go longer. (The longer a tomato sauce simmers, the better the flavor.)
