Who doesn’t love avocado? I sure do. This pairing is simply delectable. (Especially for those who are hungry shortly after finishing a plain avocado toast…AKA me.)

This combination is flavorful and will keep you full. Not to mention this nutrient-rich meal takes under 5 minutes to prepare. No cooking involved! Also, this can be enjoyed for breakfast, lunch or dinner.

Avocado Toast + Smoked Salmon

This is a quick, nutrient dense meal. This can be for breakfast, lunch, dinner OR a snack.

Ingredients
  

  • 1/2 ripe avocado
  • 1 piece whole wheat toast I used whole wheat sourdough
  • 1/4 lemon juice for flavor and to reduce avocado browning
  • pinch of salt
  • pinch of pepper
  • 3 slices smoked salmon I bought mine from Trader Joe’s

Instructions
 

  • Toast your choice of bread
  • Mash or slice the avocado and place on the piece of toast
  • Add lemon juice, salt & pepper to the avocado
  • Top the avocado and toast with 3 slices of smoked salmon. (If you do not have avocado, feel free to swap with cottage cheese.)
