Butternut squash is beautifully nutty with a soft chewiness that almost melts in one’s mouth. It is decadent when served fresh but also holds up quite well, leftover. This recipe calls for 20 oz of butternut squash. Here are some ideas of how to repurpose these leftovers for lunch and dinner:

  • Add to soup
  • Make a pizza
  • Add to a salad
  • Add it to ravioli
  • More sandwiches

Healthy Butternut Squash + Goat Cheese Sandwich

This meal can be enjoyed hot or cold. This makes it the perfect toast or sandwich for breakfast/lunch/dinner/leftovers.

Ingredients
  

  • 20 oz butternut squash I buy peeled & cut from Trader Joe’s and repurpose the leftovers
  • 1 drizzle olive oil
  • 1/2 tsp garlic powder
  • 1/2 tsp salt
  • 1 pinch pepper
  • 1/2 tbsp goat cheese more or less to taste
  • 1 piece multigrain sourdough bread
  • 1 sprinkle parsley optional
  • 1 tsp shaved raw almonds optional
  • 1 drizzle honey or balsamic glaze optional

Instructions
 

  • Preheat the oven to 400 degrees Fahrenheit. 
    Put the cut & peeled butternut squash onto a baking sheet or dish. Drizzle olive oil and add salt, pepper & garlic powder. Mix & place into the oven. 
    Cook for about 25-35 minutes. (I like some browning on my squash so I leave mine in for a bit longer)
  • Once the butternut squash is done, take out of the oven and let cool for a few minutes. While that is cooling, toast the multigrain bread. 
  • Once the bread is toasted, spread the goat cheese. Place your desired amount of butternut squash on the toast and add the optional additions (if you’d like). 
    Top it off with another piece of toast to turn this open-faced sammy into the classic. 
    Enjoy!

Beet Hummus On Cracker

I wanted to make a note about the garlic. Often times, we may find that recipes don’t call for enough garlic. With this, I do recommend only using one clove. Raw garlic is much more pungent and can easily overpower a dish. If you do find that one clove of garlic is not enough, feel free to add after a taste test. Tasting as we go is always the best policy! Enjoy.

This beet hummus recipe is quick & easy to make. It is filling and rich in nutrients. This recipe can be enjoyed classically or repurposed in many ways!

Ingredients
  

  • 1 can chickpeas/garbanzo beans
  • 1 small beet
  • 1 clove garlic
  • 1-2 lemon(s) these can be used for zest too
  • salt and pepper to taste
  • 1 tbsp shaved almonds optional
  • 1 tsp crumbled goat cheese optional

Instructions
 

  • Bring a deep pot to boil with water (on high heat). Once boiling, salt the water and add in the 1 small beet. 
  • While the beet is boiling, heat the chickpeas in a saucepan. Rinse and drain.
  • Once the beet is soft (poke a fork through it), let cool & peel. Pro tip: rub the beet with a paper towel and the peel will come off easily and cleanly. 
    Cut the beet into chunks
  • Throw the beet, chickpeas, lemon juice, lemon zest (this can be added at the end too), 1 clove of garlic & salt/pepper to taste. 
  • If desired, top hummus with shaved almonds, goat cheese & lemon zest. Enjoy!

For me, the gym started to get stagnant and I wasn’t a fan of the time it took to commute to the gym. Variety.

Popsugar Fitness offers a vast array of workouts. From pilates to HIIT, there’s something there for every preference. We can easily switch our routine or do more of the workouts we already enjoy. In reality, the reptitive workouts can get boring. In addition, our bodies are not as challenged once that starts to happen. Thanks to the Popsugar Fitness Youtube channel, we’ll never be bored working out again.

Time Saver.

It is nice to roll out of bed, get dressed and head to the living room for a workout. Rather than a 10-20 minute commute to the gym each way. We can sleep in a bit longer, have more time to cook a hearty breakfast, or whatever you enjoy to do before the workday sets in.

Flexibility.

A workout can be snuck in whenever it fits in our schedules. This could be before work, at lunch, when bored on a Saturday afternoon, on vacation, the list goes on!  

Rewarding.

There is an undeniable sense of accomplishment when the workout is complete. It is beneficial to challenge ourselves and hold ourselves accountable. It’s easy to not give a workout our best when the instructor is not in the room (I’m guilty of this at times). But when we still give it our all and have a successful workout, we can thank ourselves. This accomplishment is something to be proud of and accountability is a skill we can bring into other areas of our lives.
